Most of these ingredients are canned and at least in my house, we almost always have them all on-hand. Toss everything into a bowl, give it a mix, sprinkle some cheese, and you’ve got a delicious, healthy, and protein packed salad.
THE CHICKEN IS OPTIONAL
We’ve made this salad with and without chicken and it’s equally delicious. The chickpeas add protein into the mix already, so the protein from the chicken is really a bonus. So if you don’t have any leftover chicken on hand, feel free to skip it.
Chickpea Chicken Salad

1/2 cup sweet corn, canned
1/2 can of cooked chickpeas, rinsed
4 tbsp pickled beets, diced
2 mini cucumbers, diced
1-2 tbsp tahini
1 tbsp lemon juice
1/2 cup of roasted chicken breast, diced
Sprinkle of salt to taste
A sprinkle of crumbled feta cheese
Directions
- Mix everything except the feta cheese together in the bowl you’ll eat
- Sprinkle feta cheese on top.
- serve!
